Kitchen and Housewares Reviews of Global GS-1 - 4 1/4 inch, 11cm Preparation Paring KnifeCustomer Review: Odile Swann Summary: 5 Stars
I got this knife for my daughter, in addition to a set of Global knives as a house warming present. Now she has two and won't part with it. She uses the extra one for the appetizer tray. It looks very chic. I had to get one for myself.
I have a selection of Global knives which I have collected over the years, after I asked a gourmet cook what kind he preferred. "Global" was his quick response.
Using the recommended sharpener, roughly three times a month, has kept them in excellent condition.
I love the design and they all look great on a magnetic rack attached to the wall in my kitchen.
When comparing price with other "fancy-schmancy" brands which I have bought in the past, and long since put them in the "spare" drawer, these have been the best overall deal.
Description of Global GS-1 - 4 1/4 inch, 11cm Preparation Paring KnifeThis 4 inch Paring Knife (GS-1) from the GS Series of Global kitchen cutlery is a kitchenware essential. The elegant angled handle of this kitchen knife is comfortable to grip and provides precision control making it the best knife for apple paring and peeling as well as more delicate slicing. The best knives feature thin and razor sharp blades that cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The lightweight knife reduces hand fatigue while the unique darkened dimple-pattern on the knife's handle allow for a non-slip grip. Designed to meet the rigors of professional kitchens, Global cutlery has become the chefs' cutlery of choice and an appealing choice among home cooks. Global kitchen cutlery is meticulously forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18 percent chromium for good stain resistance plus molybdenum and vanadium, which provide superior edge retention. Global knife blades are ground to a straight point rather than the western style of beveled edges. Global knives feature seamless, all stainless steel construction with a smooth contour that eliminates food and dirt traps. Available in an array of knife blade types and sizes - from open stock to cutlery sets - Global is an ideal choice when selecting knives for the kitchen. High-tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper, rather than a short bevel, so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor sharp. Although Global also makes a heavyweight line for cooks who prefer hefty knives, its original knives--of which this 4-1/4-inch paring knife is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Global achieves balance on these knives by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as the cook maneuvers the blade. A finger notch between blade and handle provides safety. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp, and the seamless construction between handle and blade is more sanitary. This knife's wedge-shaped handle is particularly well engineered for grasping securely with a relaxed hand. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen Sharpener. Global also makes a sharpening guide set so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage. --Fred Brack
